節半商店
行き付けの鰹節屋さん。
こちらの店では、いつも鰹節削り機がフル稼働していて、鰹節の芳香が店中に充満している。伺ったところ、荒節を一旦蒸して鰹節削り機に掛け、花かつおや厚削りを作っている様子。削り節が、市内の料理屋さん向けに大量に袋詰めされている。
ウチではずっと自前で本枯節を削っていたが、なかなか薄く長く削れないので、最近はこちらの削り節も併用している。本枯節は上品だが、荒節は鰹の香りがより濃く、濃縮出汁を作るには適しているように思っている。
